NEGKOSKA CARBONIC

Protected Geographical Indication Slopes of Paiko (PGI)

A playful yet complex natural red made from 100% Negoska, Negkoska Carbonic hails from organically and biodynamically farmed vineyards in Pentalofos, on the sandy clay slopes of Paiko. Whole grape clusters undergo semi-carbonic maceration in anaerobic conditions for 4 days, followed by spontaneous fermentation and 6 months of lees contact. Unfined, unfiltered, and low in sulfur, it bursts with sun-dried strawberry, red fruits, cloves, cinnamon, fresh herbs, and a balsamic touch. Juicy, vibrant, and delicately tannic, it’s a bright, aromatic red with a fresh twist—made for chill sipping.

VINIFICATION

Semi-carbonic maceration of the whole grape cluster takes place in anaerobic conditions of a fermenting juice for 4 days. After the maceration the grape clusters are carefully pressed, and the remaining sugar is transformed into alcohol through the normal spontaneous alcoholic fermentation process. The wine remains in contact with the lees for 6 months and is unfined and unfiltered, with low sulfur level, added before bottling.
