MOSAIC WHITE

Protected Geographical Indication Slopes of PAIKO ( P.G.I. )

A harmonious blend of three varietals—Xinomavro blanc de noir, Roditis, and Assyrtiko—organically and biodynamically grown on the diverse soils of Bidabla and Fyliria in Goumenissa. Each variety is vinified separately at low temperatures to preserve its character, then carefully blended and aged on the lees for three months. The result is a bright, golden-hued wine with green reflections, offering a layered bouquet of citrus and fresh fruit. Light-bodied and refreshing, with a soft, fruity finish—best enjoyed well-chilled.

VINIFICATION

Roditis and Assyrtiko are gently pressed and let to coferment at low temperatures. Xinomavro is pressed and immediately separated from the skins (blanc de noir procedure), and then left to ferment at low temperatures. Following the alcoholic fermentation, the wines are blended together, with the final wine remaining in contact with the lees for 3 months before being bottled.
