miniMus

Protected Geographical Indication Slopes of Paiko (PGI)

A elegant and honest expression of Xinomavro, miniMus is crafted from hand-selected, organically and biodynamically grown grapes in Filyria, Goumenissa. Fermented spontaneously in INOX tanks with zero additives, fining, or filtration, and aged in old French oak barrels, this natural red carries minimal sulfur and maximum character. With a soft violet hue and gentle turbidity, it reveals a bouquet of red berries, blackcurrant, cherry, tomato, and a touch of liquorice. On the palate, it’s structured, vibrant, and driven by crisp acidity and firm tannins—an authentic, unfiltered take on a timeless Greek variety.

VINIFICATION

Grapes are carefully hand selected and crushed before being allowed to go through spontaneous fermentation in INOX tanks, without additives, fining or filtration and with very low sulfur level, added before bottling. Following fermentation, the skins are gently pressed, and the wine is aged in French oak barrels for an additional 4 months.

ORGANOLEPTIC FEATURES
